SASTOJCI:

PERKELT OD ŠTUKE
- 2 crvena luka
- 4 režnja bijelog luka
- 1 žlica masti
- 2 dl soka od rajčice
- 1 l vode
- 2 žlice crvene domaće mljevene paprike
- 1/3 žlice soli ili Vegete
- 2,5 kg štuke
- ½ l vode


PRILOG

- domaće, rukom rađeno tijesto ili vrećica kupovnog tijesta
- ½ kg svježeg kravljeg sira
- 4 režnja slanine


PRIPREMA:

1. Na masti u tavi propirjati narezani crveni luk
2. Prebaciti iz tave u kotlić
3. Dodati sok od rajčice i vodu te prokuhati
4. Dodati sitno narezani bijeli luk
5. Nastaviti kuhati na štednjaku, pa kotlić prebaciti na otvorenu vatru i kuhati daljnjih ½ sata uz povremeno miješanje dugačkom žlicom
6. Dodati štuku narezanu na komade
7. Dodati vode toliko da pokrije ribu
8. Kuhati uz povremeno miješanje vrtnjom kotlića dok se ne počne meso odvajati od kostiju
9. Dok se perkelt kuha skuhano i ocijeđeno tijesto sjediniti sa svježim sirom i isprženom slaninom
10. Poslužiti toplo
